When I shared my turmeric falafel recipe, I mentioned serving it with two types of hummus, a conventional chickpea hummus, and an even lighter raw zucchini hummus.
With certain grains and legumes being allowed on the candida diet, I am allowed homemade conventional hummus. I don’t want to overdo the quantity of legumes that I eat at once, though. Plus, I prefer to pack as many vegetables as I can into my meals. That’s why zucchini hummus is so great; it helps me eat more vegetables, and it really tastes great!
I might even say that it’s one of my favorite recipes lately!!
It’s hard to believe that raw zucchini can be blended into such a smooth texture, but it really does work well.
