Ingredients

The ingredients for these Halloween nuggets are simple, nutritious, and perfect for a keto, paleo, or carnivore diet. Pork rind crumbs provide a crispy coating, acting as a zero-carb alternative to traditional breadcrumbs. The chicken mixture includes chicken (breast or thigh), salt, egg, and shredded cheese for added flavor. This combination keeps the chicken moist and flavorful while staying low-carb.

How to shape the nuggets for Halloween

  1. Prepare the Nugget Mixture by blending the chicken, egg, shredded cheese, and salt in a food processor until smooth. You can add other seasonings like garlic powder or herbs if you like!
  2. Prepare the pork rinds and Halloween cookie cutters. Parchment paper is also useful for forming the shapes onto a food-safe, flat surface.
  3. Shape the nuggets into spooky designs using cookie cutters or your fingers. You can form little ghosts, bats, or pumpkin shapes. Keep the shapes relatively simple for easier handling.
  4. Roll each nugget in pork rind crumbs to coat them completely. For larger shapes that are difficult to handle, sprinkle the ground pork rinds over the shapes and press them into the meat. Then flip the shapes over and repeat on the other side.
  5. To make the nuggets ahead of time, freeze them, uncooked, on a parchment-lined tray. Once frozen, store in freezer bags until you’re ready to cook them.
  6. Brush the nuggets with melted lard or bacon grease before air frying them. This ensures that they brown evenly and become crispy.

Cooking Methods

You can either air fry or deep-fry the nuggets depending on your preference.

  • Air Fryer: Brush the shaped nuggets with melted lard or bacon grease and air fry them at 375°F (190°C) for about 15 minutes, flipping halfway through, until golden and crispy.
  • Deep Fry: Heat lard or tallow in a deep pan and fry the nuggets for about four to five minutes per side, until crispy and cooked through.

Expert Tips for Perfect Halloween Nuggets

  • Keep the Shapes Simple: Avoid intricate designs that are difficult to handle. Stick with fun, basic shapes like ghosts and pumpkins.
  • Make Them Extra Spooky: After cooking, you can use dabs of sauce to add spooky details to your nuggets (like eyes)! Some recipes you can use are: homemade fermented ketchup or barbecue sauce.
  • Serve with Festive Dips: Pair your Halloween nuggets with “bloody” ketchup or green guacamole for added color and gore.

Ingredients

Nugget mixture

  • 1 pound of chicken breast, thigh meat, or a mix
  • ½ cup shredded cheese cheddar or mozzarella works great
  • 1 egg
  • 1 teaspoon salt

Coating/frying ingredients

  • 1 cup ground pork rinds for coating
  • 2 Tablespoons melted lard or bacon grease for brushing or frying

Instructions

Make the nugget mixture

  • In a food processor, blend the chicken (either breast, thigh meat, or a combination) with the egg, cheese, and salt until it forms a smooth paste.

Form the nuggets

  • Scoop small amounts of the chicken mixture and press them into Halloween-shaped cookie cutters. For larger nuggets, form them directly onto parchment paper.
  • Roll each nugget in pork rind crumbs, pressing the crumbs into the chicken mixture.

Method 1: Use an air fryer or an oven

  • Brush each nugget with melted lard or bacon grease before cooking.
  • Arrange the nuggets on an air fryer tray lined with parchment paper (or in the basket). Air fry at 375°F (190°C) for around 15 minutes, flipping halfway through, until the outside is crispy and golden.

Method 2: Deep fry the nuggets

  • Heat lard or tallow in a deep skillet over medium heat. Fry the nuggets for about 5 minutes on each side until they're golden and cooked through.

Notes

 
Texture Control: If the mixture feels too sticky, add a bit more cheese to firm it up. The cheese will also melt beautifully, adding to the flavor and texture.
Crispier Coating: For extra crispiness, you can double-coat the nuggets by rolling them in the pork rinds, dipping them in a bit of beaten egg, and rolling them again before cooking.

Halloween Chicken Tender Alternative

In the past, I showed you how to make chicken tenders using chicken breast fillets coated with a breading of your choice. At first, I used a grain-free breading made of tapioca flour and almond flour. I would now coat them in pork rind crumbs instead.

I prefer the ease of making nuggets, and the lightness of the finished product, but I decided to keep the old recipe up for those who want to give it a try! The original recipe for paleo breaded chicken was published on Oct. 6, 2014 and has been moved to this new post in October 2024.

This recipe is very versatile, so bread the meat however you prefer.

Cutting the shapes

If using plastic cookie cutters, it can be tricky to cut the chicken breasts into the desired shapes. To make the process easier, either buy thinly filleted chicken breasts or pound them to make them thinner and more even. Use a meat mallet or the bottom of a strong glass. (Be careful if choosing the second option, so the glass doesn’t break, and you don’t cut yourself.)

The ideal thickness isn’t paper-thin but is thin enough to cut with cookie cutters, around a quarter of an inch.

Once you’ve prepared the chicken fillets, place one of the cookie cutters on a fillet and press down on it to cut out your shape. If the cookie cutters haven’t completely cut out the shape, you can use some kitchen scissors or a knife to finish the job.

To be able to make as many shapes as you can with the chicken fillets, it’s a good idea to start cutting them out near the edges and plan out which shapes to cut from each fillet. Any leftover chicken “scraps” can be cut into small pieces and breaded to make “popcorn chicken.”

Breading and cooking the tenders

Once you have finished cutting out the shapes, it’s time to bread them. You can choose any type of breading you like. I’ve provided grain-free, keto, and traditional alternatives in the recipe card below. If you have your own recipe, feel free to use it.

Once you’ve dipped it into the egg mixture, dip it into the breading of choice.

Like the other chicken nuggets, you can either deep-fry or air fry these chicken tenders.

Steps to make Halloween chicken tenders: flatten the chicken, cut with a cookie cutter, coat in egg and breadcrumbs, and fry in a pan until golden.

Expert tips

To make as many shapes possible, plan out which shapes will fit on each fillet, starting near the edges.

Leftover chicken “scraps” can be cut into small pieces and breaded to make “popcorn chicken.”

To get a thicker coating of breading, coat the chicken with a finer flour first before dipping it in beaten egg. The flour will help the egg adhere to the chicken pieces better.

Equiment

Ingredients

  • 2 chicken breasts (1 lb., 8 oz. each) thinly sliced
  • 1 egg

For Grain-free Nuggets

  • 3/4 cup tapioca flour
  • 1/2 cup almond flour

For "Regular" Nuggets

  • 1/2 cup flour
  • 1/2 cup breadcrumbs

For Keto/Carnivore Tenders

  • 1 cup pork rind crumbs

Herbs mixture

  • salt
  • freshly ground black pepper
  • other herbs and spices optional
  • coconut oil for frying

Instructions

  • Prepare the chicken breasts by pounding them thinly before cutting them into the desired shapes. Pounding it with a mallet or the bottom of a glass helps make it easier to cut and also helps tenderize it.
  • Use cookie cutters to cut out shapes from the chicken breast fillets.
  • If using plastic cookie cutters, or if the cutters you are using aren't very sharp, you may need to touch up the shapes with a knife or cooking scissors.
  • Beat an egg in a deep dish or shallow bowl.

For Grain Free Chicken Nuggets

  • Cover the cut chicken pieces with tapioca flour by dipping them in a bowl with around 1/4 cup of tapioca flour until coated.
  • Mix together the remaining 1/2 cup of tapioca starch and 1/2 cup almond flour in another dish. Season with salt, pepper, and any other herbs. (See notes below.)

For "Regular" Nuggets

  • Coat the chicken pieces with the regular flour.
  • Season the breadcrumbs with salt, pepper, and other herbs.

Finishing both types of Nuggets

  • Dip the coated pieces in the egg mixture.
  • Coat the egg-covered chicken pieces with the seasoned, grain-free flour mixture, breadcrumbs, or more pork rind crumbs.

For deep frying

  • Meanwhile, heat up some lard for deep-frying.
  • Fry at medium to high heat until golden brown.
  • Flip the chicken pieces and continue to fry until both sides are golden brown, and the center is cooked through.

For air fryer

  • Brush each nugget with melted lard or bacon grease before cooking. This helps them brown evenly and gives them a delicious, crispy coating.
  • Air fry at 375°F (190°C) for around eight minutes. Then flip them and continue cooking until the outside is crispy and golden.

Notes

  • Keep in mind that almonds will burn more easily than a traditional bread crumb coating. So, don’t turn up the heat too high; and the thinner the chicken, the better, to assure a fully cooked tender without burning the breading.
  • These can be seasoned to suit your taste with a variety of herbs. (Parsley, garlic, oregano, and thyme are great choices).
  • I use about 1/2 tsp. of salt for every cup of the grain-free flour mixture (or breadcrumbs).
  • Bread the remaining chicken “scraps” and fry the pieces to make “popcorn chicken.”
  • If you prefer, you can bake the nuggets in the oven instead of deep frying them. Bake at around 200ºC/400ºF for around 15-20 minutes, or until golden brown. (Flip halfway through the process.)

How to make sweet potato fries

In the photos, I accompanied the nuggets with baked sweet potato fries. You could also serve them with paleo pumpkin fries instead.

To make sweet potato fries:

  1. Preheat the oven broiler.
  2. Clean and (optionally) peel the sweet potatoes.
  3. Cut them into strips.
  4. Coat them with oil or melted lard.
  5. Broil in the oven until they start to get brown spots.
  6. Flip the strips over and broil the other side.
  7. Sprinkle with salt and freshly ground pepper.
