On Christmas, I made some 2 ingredient paleo plantain pancakes that my family just happened to love! It was sort of by accident because I didn’t have anything planned, and just started to experiment with what I had on hand.
If you have tried the 2 ingredient banana pancakes that were popular on Pinterest for a while, I know what you might be thinking: “Those aren’t going to work and aren’t going to be great.”
I know, I unsuccessfully tried to make the two ingredient banana pancakes several times, but they just didn’t hold up very well for me. It was super difficult to get the pancakes to set up well enough to easily flip them. I could never understand how the Pinterest pictures showed pancakes that actually looked like the real deal. How did they do it? Did they leave them for 10 minutes on each side over super low heat so they wouldn’t burn!?!
Something about the sugar content in the bananas made those pancakes a “no go” for me, but plantains are a lot more starchy and less sweet so they can be used in a similar way to make something that actually does resemble “real” pancakes. Not only are they easy to cook and flip on the skillet, but they taste so much better than the banana variety.
I’m sharing my original recipe for paleo plantain pancakes, with a few optional tweeks, on Rubies and Radishes, but I decided to share with you something a bit more sinful here, something that would even be perfect for dessert.
While these look fancy and impressive, they are actually quite simple to make. Did I mention they’re delicious?!?
The pancakes themselves are paleo, but for those who are strictly paleo and dairy free, my chocolate mascarpone filling won’t work. That’s why I decided to call these grain free pancakes, but if you want them to be more strictly paleo, you can substitute my filling with a chocolate ganache made from coconut milk and chocolate bars. (Read the last step of the recipe for more information.) Or you could just make some unfilled chocolate paleo pancakes.
