These homemade gummy eyeballs are made with fruit juice, blueberries, coconut milk, and gelatin. They're creepy enough for a Halloween party, but surprisingly delicious!
1teaspoonhoneyor other sweetener, to taste (optional)
Instructions
Prepare the fruit gelatin
Sprinkle the gelatin over the cold fruit juice or purée. Let it sit for a few minutes until the gelatin has absorbed the liquid and bloomed.
Gently heat the mixture in a small saucepan or over a water bath, stirring until the gelatin has completely dissolved. If using a thick fruit purée, add a little water or juice to thin it, if needed.
Make the pupils and irises
Place one blueberry in each cavity of a silicone half-sphere mold.
Using a syringe, dropper, or decorating pen, carefully add a small amount of the fruit gelatin around each blueberry. Use just enough to form a thin layer around the pupils.
Refrigerate the molds until the fruit gelatin has set.
Prepare the coconut milk gelatin
Sprinkle the remaining gelatin over half of the cold coconut milk. Let it bloom for a few minutes.
Gently heat the other half of the coconut milk in a small saucepan. Add the bloomed gelatin mixture and stir until completely dissolved. Add honey or another sweetener, if desired.
Finish the gummy eyeballs
Carefully pour a very thin layer of the coconut milk gelatin over the blueberries. Refrigerate until the layer has set. This helps keep the blueberries from floating when you add the remaining mixture.
Fill the molds with the remaining coconut milk gelatin and refrigerate until completely firm.
Carefully remove the gummy eyeballs from the molds. Pop your eyes out! (Not YOUR eyes—the gelatin ones, please!)

Notes
Fruit juice or purée: Pomegranate juice works particularly well because it flows around the blueberries, creating a translucent layer that makes the eyeballs look more realistic. If using a thick fruit purée, thin it with a little water or juice.Leftover gelatin: Depending on the size of your molds, you may have some gelatin mixture left over. Pour it into other molds to make extra gummies, or use it to experiment with homemade gelatin stamps!Serving suggestion: For an extra-gory Halloween presentation, serve the eyeballs in a bowl of red fruit juice or berry purée.Storage: Store the gummy eyeballs in an airtight container in the refrigerator for up to 3–4 days. Freezing isn't recommended because it can affect the texture and cause the layers to separate.Yield: Makes approximately 15 gummy eyeballs, depending on the size of your molds.
