maple syrup
(or a low-carb sweetener of your choice)

Instructions
Blend together fresh pineapple chunks with some maple syrup until you obtain a sweet pineapple puree.
Mix together the coconut chips and pineapple puree until the coconut chips are well coated.
Spread the coconut chips over a baking tray and bake on low until fully dry and crispy. You can also use a dehydrator instead.
Serve immediately or store in an airtight container until ready to serve.
