Mascarpone cheese gives this simple, sweet pumpkin pie dip a sweet creaminess that you'll want to eat right off the spoon, or on apple wedges or cookies. Makes around 1 cup
If you are using a homemade pumpkin puree that isn't very thick, you can thicken it by cooking it over low heat until some of the moisture has evaporated. You'll want to let it cool before proceeding to make the recipe.
Blend together all of the ingredients until they are fully combined. You can use an immersion blender to make the process a bit easier.
Pour the mixture into a serving bowl and store in the fridge. The dip will set up and thicken after you allow it to sit in the fridge for a while.
Serve with fruits, veggies, or cookies of your choice. (or baked apple fries, of course)
